Pork loin can often be found on sale, making this an impressive yet economical entree.
Start at a high temperature, then lower it to finish the roasting.

Herb rub
Chop all the herbs together and combine with the other ingredients in a small bowl to form a paste.
The roast
Massage the seasoning mixture all over the loin, meat and fat.
Put the roast in a roasting pan on a rack.
Roast at 450° for 20 minutes, then reduce the heat to 325°.
Remove from the oven when the internal temperature reaches 145°. Cover with foil and allow to rest for about 20 minutes before carving. It will continue to cook while resting.
